Tomato puree
Tomato puree is a dull pulp of tomatoes with a content of 8 to 12% of dry substances. A thicker consistency will be called tomato paste. The fruit is cleaned of the peel, the stalk is removed. The pulp is crushed and filtered to get rid of the seeds. The liquid mixture is boiled, salt is added. The word "tomato" goes back to the Aztec "tomato" - "bloated fruit."
