Wash the mushrooms and soak in cold water for 1 hour. Peel the carrots and onions and finely chop them. Wash, dry and chop fresh herbs for serving.
Make homemade noodles. Mix flour, eggs, salt and water in a deep container. Knead a stiff dough. Roll it out to paper thickness. Cut thin strips of noodles with a sharp knife. Cover with a towel.
Make a fry. Boil the mushrooms in boiling salted water for 20 minutes. While they are cooking, prepare the carrots and onions. To do this, heat the oil in a frying pan. Add onion to the pan and simmer for 2-3 minutes. Next add carrots and mushrooms. Simmer for another 5 minutes.
Make some soup. Boil the water in which the mushrooms were cooked in a saucepan, after straining it. Season with salt and pepper. Add fried mushrooms. Add bay leaf to soup. Once the soup base comes to a boil, add the noodles to it. Cook for 3-5 minutes depending on the thickness of the noodles.
Serve dried mushroom noodles with a dollop of sour cream. Garnish the dish with fresh herbs.
