Prepare utensils for cooking.
Break the eggs into a bowl and add salt to taste. Beat with a whisk or fork until smooth. Heat vegetable oil in a frying pan and pour in the egg mixture, forming a thin pancake. Fry over medium heat for 2 minutes; when the edges of the pancake are set, place a slice of cheese in the center and cook for about a minute.
When the cheese begins to melt, carefully fold the edges of the pancake, forming an envelope. To do this, fold and cover the filling with two opposite edges. Then tuck the remaining edges and press the resulting envelope with a spatula, carefully turn the envelope seam side down and fry for 30 seconds.
Trim off the protruding edges of the envelope, giving them a neat shape. Chop the greens and decorate the dish on top.
