Remove the cottage cheese, butter and eggs from the refrigerator in advance and let them warm to room temperature. Prepare a special microwave-safe bowl with a volume half as large as the amount of food, as the mass will rise and may leak out.
Place the cottage cheese in a bowl twice the size of the cottage cheese. Mash well with a fork and microwave at maximum power for 10 minutes. After a couple of minutes, stir the mixture. During this time, keep an eye on the curd and stir.
As soon as the cottage cheese has boiled and become denser, add salt, butter and 2 eggs. Beat the eggs well with a fork first. The oil should be at room temperature. Reduce microwave power and continue heating for another 10 minutes.
Take out the cheese mass and add soda, stir quickly and put it in the microwave again for 10 minutes, the mass will begin to increase and become porous. Reduce power again and continue heating for 10 minutes. The mass should become porous. You don't need to stir at this stage.
Add 2 softly beaten eggs, quickly stir them into the cheese and continue to cook for the last 10 minutes until tender on medium power. You can stir it a couple of times with a spoon.
Remove the homemade cheese from the microwave and transfer it to the mold, after greasing it with a piece of butter. Cover the top with parchment paper and place a light press. Cool the cheese to room temperature, then refrigerate it overnight to firm it up.
Slice cheese for sandwiches, sandwiches, salads or appetizers.
