If you decide to cook the basics in a frying pan and not use other dishes for stewing, first wash the meat and all vegetables and chop them. For the basics, cut the meat into thin strips, the cucumbers into long slices diagonally, the cheese into small random pieces.
Heat the ghee oil in a frying pan and fry the meat over high heat until a crust forms. It is important that the meat is fried at this stage, but not stewed. Otherwise, it will release juice prematurely and will not be as tasty in the finished dish.
Add chopped cucumbers to the meat, reduce heat and simmer for about 10 minutes without adding other ingredients. Cucumbers give the basics a characteristic sourness; choose only salted or pickled, sometimes called barrel, cucumbers. Pickled ones will not work in this recipe.
Pour in sour cream, tkemali sauce and broth, add melted or soft cream cheese. Stir and simmer over low heat for about 30 minutes until the meat is cooked.
Serve the basics in sour cream sauce hot for lunch or dinner as a main course.
