Peel the pumpkin and cut into small cubes. Peel the carrots, wash them, grate them on a coarse grater. Peel the garlic and chop under a press. Peel the onion and chop it.
Pour vegetable oil into a deep saucepan, put on fire, and heat. Add garlic and fry. Add onion, fry until transparent. Add carrots and pumpkin, fry, cover, simmer for 25-30 minutes.
Add tomato paste to the pan. Pour in soy sauce, add salt and sugar. Mix everything, simmer for 7-8 minutes.
Place the mixture into a blender bowl. Pour in oil, vinegar, grind to a paste. Place in sterilized jars.
Serve chilled caviar in individual salad bowls with the main hot dish.
